For the past year I have been counting down the days to Cinco de Mayo 2020.
Why?
Because this is the first year since I’ve been 21 that it has fallen on Taco Tuesday, and I love Taco Tuesday! I had big plans to go to a local Mexican place where I could indulge in margaritas, tacos, good music, and good vibes.
But, like all good things, the ‘rona had to come in and squash all our hopes and dreams.
But never fear, a little quarantine wasn’t going to stop us from turning our usual Taco Tuesday into an epic date night at home!

- Guacamole Flight from Mezcal Cantina in Worcester, MA

- Cool Ranch Bacon – the House Guac with bacon, crispy pork belly, and a ranch drizzle
- Thai Rooster (my favorite!) – the House Guac with dried pineapple, toasted coconut, black beans, and Sriracha sauce
The Tacos
- Shrimp Tacos
- A couple months ago I started feening for shrimp tacos, but every time I went to order them from my favorite place they were sold out!
I started scouring the interwebs for a recipe that would satisfy this insatiable need inside…and I finally found the perfect one.
It is so perfect that we have now added this to our weekly rotation and I normally want it more than once…I’m not even sorry.

Salsa dancing!
No Mexican date night at home would be complete without a little salsa!
I started salsa dancing in middle school when my mom picked it up, but Mark has never had any kind of formal dance training in his entire life. For that reason, I insisted that he learn from a Youtube video rather than me ruining date night by getting frustrated as I tried to teach him myself. (Here is where you congratulate me on my self awareness…)
